Ingredients
  • 6 ounces Eggs (3 eggs)
  • 1 3/4 cup Sugar
  • 1 cup Oil
  • 2 teaspoons Vanilla
  • 2 cups Shredded Zucchini
  • 2 ounces Melted Unsweetened Chocolate (2 squares melted unsweetened chocolate or use ¼ cup cocoa powder)
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 Egg
  • 1 teaspoon Baking Soda
  • 2 1/2 cups Flour

    Grease and flour a rectangular cake pan. Preheat oven to 350 degrees.

    Put all ingredients in a bowl and stir till combined.

    Pour into cake pan and bake for 45-55 minutes. Toothpick inserted in center should come out clean.

    Optional dusting with icing sugar or topping of icing (it is so good that you really don’t need any of that).
