This is the carrot casserole that Natalie talks about in December 2012 article in “Canadian Living Magazine”. Agnes Leahy is Natalie’s sister-in-law.
Melt butter add onion, cook on low heat till soft. Stir in flour, add the milk slowly until
thick and smooth.
Remove from heat and add cheese, parsley salt and pepper.
Add carrots and put into a baking dish.
Melt the butter and mix in cornflakes. Spread over top of casserole.
Bake for 20 minutes in a 375 degree oven.
